Sodexo Peru has secured a contract to serve as the official foodservice supplier of the 2019 Pan-American Games in Lima.
As part of the contract, the company will operate two different culinary concepts, including Lima Culinary Tour and Inka Bio Market, to serve 6,700 competing athletes.
The event started on 26 July and will end on 11 August.
Lima Culinary Tour features Peruvian dishes such as causa limeña, fish ceviche, stuffed potato, tamales, solterito and papa a la huancaína, lomo saltado, pescado a la chorrillana, ají de gallina, chicken escabeche and arroz con pollo to diners.
The Inka Bio Market concept serves fruits and vegetables such as tangerines, pitahaya, blue berry, aguaymanto, apples, cacao, tumbo, peaches, zucchini, peppers, eggplant, broccoli, cauliflower, red and white onion, and radishes along with various breakfast options.
Sodexo Peru corporate services executive director Edgardo Oliva said: “Lima is a fusion of cultures and flavours. What we are looking for with our gastronomic proposal, based on the requirements of Lima 2019, is not only to contribute to the worldwide recognition of our wide and varied local food, but to ensure the quality, safety and good taste that all food must have.”
