US-based HenHouse Brewing Company has announced the opening of its new brewpub location, West County Pub, in Fairfax, California.
The new location is said to be the first HenHouse outlet to open outside Sonoma County and the first with a kitchen.
The brewpub’s kitchen will be headed by executive chef Lauren Garcia and will feature seasonally available ingredients from local farms, ranches, fisheries and bakeries.
The food menu will be based on the beer-centric culinary traditions of Korea, Japan, Mexico, Germany and Belgium.
It includes ahi poke mini tacos with candied jalapeno, a signature spicy fried chicken sandwich and a ‘very special’ burger.
Chef Garcia said: “It’s been really fun to design a menu around beer, using flavours from all over the world. I’m excited to give people a unique culinary experience and looking forward to building relationships with so many of my favourite local growers and producers.”

By GlobalDataThe new pub has been opened at a location that was previously occupied by Iron Springs Pub & Brewery and features an outdoor patio with a seating capacity of 200.
HenHouse claims that its brewpub will produce its characteristic big flavours with less carbon.
West County Pub will feature a rotating menu of 19 beers on tap, 50% of which will be produced on-site and available to-go in reusable, vacuum-insulated, stainless steel growlers.
The company noted that it intends to work with independent malthouses to source grain within a 500-mile radius.
HenHouse co-founder and CEO Collin McDonnell said: “We’re stoked to support local businesses by partnering with growers like Crane Ranch in Petaluma and maltsters like Admiral in Alameda. We love the idea that someone who grew the grain can come to West County Pub after work and enjoy a beer.”
