
American fast-casual restaurant chain Chicken Salad Chick is set to further expand its network with a location in St Matthews, Kentucky.
To open on 24 April 2024, the outlet at 7900 Shelbyville Road in the Oxmoor Center will be the company’s fourth restaurant in the Louisville area.
Owned by Karen and Jon Riddle of Derby City Chicks, the St Matthews venue will feature a private dining room and patio. It offers the brand’s signature Southern hospitality with special events during its opening week.
The new Chicken Salad Chick location will operate from Monday to Saturday from 10am to 8pm.
Karen and Jon Riddle began their journey with the brand four years ago, opening their first restaurant in Jeffersonville, Indiana in 2020.

Chicken Salad Chick opened a new restaurant in Greenville, North Carolina.
The venue, which began serving customers on 10 April 2024, is managed by franchise owners Chris Carnes and Ben Fields, alongside operating partner Jonah Greenup. It was the brand’s 14th establishment in North Carolina.
Chicken Salad Chick’s expansion in Kentucky also includes a location that opened in October 2023 in Fern Creek, Louisville.
