Greek restaurant brand estiatorio Milos is opening a new location in West Palm Beach in the US state of Florida on 7 February 2025. 

The outlet will be the 12th for the brand globally and the second in Florida, and has seating for 294 guests. 

Founded by chef and restaurateur Costas Spiliadis, estiatorio Milos West Palm Beach will offer fresh, seasonal ingredients in a two-floor space. 

Since its inception in Montreal in 1979, the estiatorio Milos brand has been known for its seafood sourced daily from the Mediterranean, fresh produce and select meats.  

The restaurant in West Palm Beach will feature a fish marketplace, where diners can select seafood options such as whole fish, shellfish and caviar, along with seasonal vegetables.  

The menu will also feature signature dishes such as Tuna Tartare.

Whole fish will be baked in sea salt or grilled, and the Milos Special will offer a combination of zucchini and eggplant, lightly fried and served with saganaki cheese and tzatziki.  

The menu also offers spreads, traditional tomato salad, Astakomakaronada – an Athenian-style lobster pasta – Greek yogurt and baklava kaimaki. 

The restaurant has a bar area which transitions into an outdoor terrace. 

A selection of Greek wines, featuring indigenous grape varieties that complement the dining experience, will be offered at the restaurant.
