US-based food truck and restaurant franchise Cousins Maine Lobster is expanding its presence in Upstate New York with the launch of a second food truck.

Set to open on 18 March 2025, the new food truck will be located at the Tractor Supply Canandaigua, 2380 Rochester Rd., Rte 332 North, Canandaigua.

The new truck will serve the Buffalo, Rochester and Syracuse areas. It is launching just nine months after the brand first entered the region.

Cindy and Pete Sztankovits, who own the Upstate New York territory, have invested in the new truck to cater to growing demand.

The couple, who have been the brand’s multi-unit operators since 2019, now own and operate ten trucks across Pennsylvania, New Jersey and New England, in addition to their New York operations.

Cindy said: “The strong positive reception from our existing Upstate New York customers made this expansion a clear next step for us within the region.

“Being from Massachusetts, Cousins Maine Lobster has always reminded me of home, and I love seeing that same nostalgia and excitement from our guests —especially those who don’t have easy access to wild-caught seafood. The support of our loyal fan base, local partners and dedicated team continues to allow us to bring an authentic Maine lobster experience to more communities, right in their own neighbourhoods.”

Cousins Maine Lobster’s menu includes lobster quesadillas, shrimp tacos and chowder tots.

The brand’s menu is also expanding with the growth of its food truck fleet.

In March 2025, it plans to introduce a new Garlic Butter Lobster Roll.

This variation on the classic roll will feature Maine lobster topped with garlic butter, served on a toasted New England-style bun.

Cousins Maine Lobster Development head Angela Coppler stated: “We are thrilled for Cindy and Pete as they continue to grow with Cousins Maine Lobster in New York and have taken over operations in New England.”

The group is also planning to expand to cities including Seattle, Tacoma, Vancouver, Phoenix and Tucson, and Midwest locations such as St. Louis, Cedar Rapids and Indianapolis.

It is less than a year since Cousins Maine Lobster expanded its presence in northwest Pennsylvania with the launch of its second truck.
