Chantelle Nicholson, the green-Michelin-starred chef patron of Apricity, is set to open the new culinary venture Cordia Collective at the Grade II-listed Borde Hill country estate in West Sussex, England in 2025.  

The project will embody her regenerative ethos and focus on locally sourced, seasonal food.  

The Cordia Collective will be located on the 2,300-acre Borde Hill estate and aims to celebrate its rich biodiversity and plant heritage.  

Nicholson has partnered with Ruth Osborne, co-founder of London’s Wine Car Boot, for the venture.  

Osborne brings experience from Stockholm, Sweden, where she explored and ran a project studying local resilience, farming, land equity and how to create a new blueprint for future food systems alongside owning a restaurant geared towards circularity and reducing waste. 

The bakery and garden café, named Baked by Cordia, will open in spring 2025. The café will be led by Janine Edwards, who has previously worked at Little Bread Pedlar, Darby’s and Toklas Bakery in London.

Baked by Cordia will offer bread, pastries, cakes and a daily-changing lunch menu.  

Nicholson’s focus on sustainability and local sourcing is expected to resonate with visitors looking for eco-conscious dining options.
