Meat alternative brand Impossible Foods is set to unveil its first in-person foodservice concept, Impossible Quality Meats, in Chicago, Illinois, US.
The opening is scheduled for 13 August 2024 at a location close to uptown Chicago.
This marks an expansion of Impossible Foods’ foodservice footprint, which already includes 45,000 US locations serving its plant-based products.
The pop-up store will operate from Tuesdays to Sundays from 11am to 8pm during the autumn of 2024 inside Chicago’s XMarket Food Hall. It will be managed by VEG House and leased through PlantX Life.
The menu will feature a fully plant-based selection, including small plates, mains, Sunday brunch and desserts.
Among the offerings to be served are the Impossible Breakfast Sausage Sandwich, Impossible Asian Style Meatballs, Impossible Nachos and the Impossible Grilled Chicken Caesar.

By GlobalDataThe pop-up store will also serve the Impossible Burger, available in single or double formats, the Impossible Chicago Style Hot Dog, Impossible Bratwurst, and the Impossible Chicken Nuggets with Fries, accompanied by Oatly soft serve icecream.
Customers will be able to buy Impossible Foods’ popular retail products such as Impossible Beef, Impossible Hot Dogs and Impossible Chicken Nuggets at the PlantX Bodega within the food hall.
Impossible Foods president and CEO Peter McGuinness said: “Impossible began as a foodservice brand, launching our flagship beef product in 2016 with some of the best restaurants in America.
“It’s been a natural evolution for us to create our own branded dining experience to showcase our delicious food. With Impossible Quality Meats, we wanted to offer diners a fun way to experience our food.
“From breakfast to lunch to dinner, we leaned into classic, craveable dishes people love – like nachos, smash burgers and chili cheese dogs. Choosing meat from plants shouldn’t feel like a compromise. It’s great-tasting food, plain and simple.”
