Fast-casual restaurant chain Just Salad has introduced Market Plates, a new menu category providing a diverse range of dinner options for health-conscious diners.

The permanent addition to the menu offers oven-fresh meals with premium proteins, grains and seasonal sides, all at an accessible price point.

The launch is part of Just Salad’s growth strategy, bolstered by a recent $200m capital raise, to expand nationwide and boost dinner sales.

Just Salad founder and CEO Nick Kenner stated: “We’ve built incredible loyalty with our lunch offerings, and now we’re excited to introduce a new option with the same commitment to quality, health and sustainability our customers have come to expect.

“This launch reflects our understanding that today’s consumers seek quick and convenient options that deliver healthful, protein-forward meals, whether that’s for lunch or dinner. By expanding our menu to include these chef-crafted plates, we’re answering the call from our customers who want to enjoy Just Salad in a variety of ways and beyond their traditional salad at lunch as we scale across the country.”

The Market Plates menu features the Chicken and Tzatziki Harvest, featuring basmati rice, black lentils, braised chicken with parsley, pickled red cabbage, kale and chickpea salad and a Greek-style medley of red onion, cucumber and chickpeas, topped with cucumber tzatziki.

Braised Chicken and Pesto contains basmati rice, black lentils, braised chicken, roasted mushrooms, Parmesan, a kale and chickpea salad and kale pesto vinaigrette.

The Chicken Fajita combines basmati rice, black lentils, braised chicken with cilantro (coriander), fajitas with corn, pico de gallo, avocado mash and cilantro lime vinaigrette.

Alongside Market Plates, Just Salad introduced its Spring 2025 menu, featuring four seasonal limited-time offerings.

A standout item is the Peruvian Chicken Market Plate, inspired by bold South American flavours. Other new dishes include the Protein Power, a nutrient-rich salad designed for balanced nutrition.

The lineup also features the BBQ Umami Crunch Bowl, a collaboration with Bachan’s Original Japanese Barbecue, served with smoky poblano ranch dressing.

Rounding out the selection is the BBQ Shroom Bowl, showcasing Fable’s meaty shiitake mushrooms, supergreens and zesty miso ginger vinaigrette.
