US-based fast-casual restaurant chain Portillo’s, known for its Chicago-style offerings, has appointed industry veteran Tony Darden as its chief operating officer (COO).
From 9 December 2024, Darden will be instrumental in advancing the company’s operational strategy amidst plans for nationwide expansion.
With more than three decades of experience in multi-unit restaurant management, his expertise is expected to enhance efficiency and guest satisfaction across the brand.
Darden transitions to Portillo’s from Jack in the Box, where he served in systemwide operations across 2,200 locations.
His achievements include the implementation of AI order-taking systems, showcasing his commitment to innovation.
At Portillo’s, he will focus on delivering a seamless experience for guests and team members.

Darden’s appointment comes at a time when Portillo’s is eyeing a significant increase in its footprint with plans to operate up to 920 locations in the long term.
These include full-scale restaurants and alternative formats such as Portillo’s Pick-Up spots.

In December 2024, a new outlet known as the Restaurant of the Future will open in Grapevine, Texas – a testament to Portillo’s innovative approach under Darden’s anticipated leadership.
Its compact design will be optimised for both dining-in and takeaway experiences, and it will offer kiosks and a Grab and Go section.
Portillo’s announced in August 2024 that it is piloting self-service kiosks in selected restaurants to enhance customer and staff experience.
The pilot is a key component of the company’s approach to leveraging technology to enhance the experiences of team members and guests, while optimising operational efficiency.
