Aditya Birla New Age Hospitality (ABNAH) has launched Waarsa, a new dining destination in Mumbai, offering a premium casual experience with a focus on Awadhi cuisine.

Located in the cultural hub of the National Centre for the Performing Arts at Nariman Point, Waarsa — translating to ‘inheritance ’— aims to bring the culinary heritage of Awadh to life.

The restaurant is a collaboration between culinary director Rahul Akerkar and master chef Mukhtar Qureshi, curating a menu that weaves a narrative of Awadh’s history through its food, drawing inspiration from both royal kitchens and the homes of traditional cooks.

ETHospitalityWorld.com quoted ABNAH culinary director Rahul Akerkar as saying: “We’ve crafted every detail of Waarsa to reflect the essence of Awadh in a way that is both understated and elegant. To create this, we immersed ourselves in the diverse culinary landscapes of Lucknow, Benares, Kolkata and beyond, deeply engaging with the history and nuances of this remarkable cuisine.”

The news platform also cited chef Mukhtar Qureshi of Waarsa, who stated: “The menu reflects my childhood memories of home-cooked meals and the rich stories from my family, all the while incorporating the culinary voice I’ve cultivated over the years. It honours the authenticity of Awadhi cuisine and its historical roots, but it also introduces subtle modern touches to offer a lighter and more contemporary dining experience.”

The restaurant’s design by restoration architect Abha Narain Lambah complements the culinary experience with a modern yet luxurious ambiance. Curly Tales described the interior as a blend of soft salmon hues and intricate ceiling designs that echo the grandeur of Awadh.
