Food and drink travel operator SSP Group is set to open a new international food hall, Food Collective, at Brisbane Airport under a seven-year contract.
Food Collective will open on Level 2 Departures of the airport’s Domestic Terminal in November 2019.

By GlobalDataAs part of the £40m contract, SSP will operate a large centralised seating area for Food Collective concept.
The company will also use on-site self-order kiosks to allow passengers to place food orders from five restaurants: Ze Pickle, Upper West Side Deli, YO! Sushi, Nippon Ramen and Mi Casa Burritos.
SSP will also open a newly refurbished Roll’d concept store at the Domestic Terminal.
Brisbane Airport Corporation (BAC) Consumers executive general manager Martin Ryan said: “The upgraded Café Court in the Northern end of the terminal forms the centrepiece of Stage 2 of the Domestic Terminal redevelopment and SSP’s exciting hawker-style dining options will bring a unique point of difference to Brisbane Airport’s Domestic Terminal.
“Brisbane travellers are already familiar with the fresh and tasty food and excellent service offerings of SSP-managed stores, which opened three F&B stores in the Domestic Terminal in 2016.
“Food Collective will further complement the high-quality in-terminal offerings, while providing travellers with an exciting range of pre-flight dining options that draw inspiration from popular food styles around the world.”
Midway through the contract, the travel foodservice firm is planning to rotate menu items offered at the food hall featuring new food and beverage choices.
Ze Pickle is an Australian burger bar that offers a range of food choices along with a rotating selection of craft beer.
Upper West Side Deli is a New York-inspired concept that serves sandwiches, bagels and other traditional deli lines to customers.
YO! Sushi will feature sushi, sashimi and other classic Japanese dishes at the location, and Nippon Ramen will offer a range of dumplings and ramen noodles.
Mi Casa Burritos will offer a menu featuring classic Mexican dishes such as burritos, tortillas and tacos.
In July this year, SSP Group opened the Berlin-based gastro start-up Haferkater at Frankfurt central station.
