Mexican restaurant Cantina Pedregal has opened in Folsom, California, as reported by ABC10.
The new restaurant is the result of a collaboration between Patricio Wise of Nixtaco and Brad Cecchi of Canon | East Sacramento, aiming to bring authentic northeastern Mexican cuisine to the local community.
Located at 185 Placerville Road, Suite 150, the restaurant is currently serving dinner from 5pm to 9pm daily.
The publication cited Canon | East Sacramento owner Clay Nutting as saying that Cantina Pedregal has plans to expand to lunch hours soon.
The restaurant's menu draws inspiration from the traditions of northeastern Mexico. It will offer a variety of small plates, salads and dishes reflecting the distinctive flavours of the region.
The menu includes the Cabrito en Salsa, a traditional northeastern Mexican dish featuring braised goat served with tortillas.
Nutting said: “Signature dishes include the Tlacoyo de Pulpo, which is grilled octopus and pork belly on a house-made, thick masa tortilla, called a Tlacoyo.
“Another is Ensalada Caesar, which is served warm with grilled romaine, dry jack cheese, caesar dressing and a side of tortillas and is meant to (be enjoyed) like a taco.”
Cantina Pedregal has also contributed to local employment by hiring 40 local staff.
The opening of Cantina Pedregal was initially planned for January 2024 but was delayed to accommodate the construction of a covered outdoor patio.
