Carbone, an Italian-American dining room based in New York City, will open in London, UK at the Chancery Rosewood Hotel, Bloomberg has reported.

The restaurant will open on the ground floor of the hotel, marking a significant expansion for the dining group which has been considering entry to the UK market.

Major Food Group, the parent company of Carbone, has been focussed on expansion with new ventures in Hong Kong, Doha and Paris.

The group is also expanding in the US and has recently announced a partnership with Marea, another New York Italian restaurant, to take the brand global.

The Chancery Rosewood, located in the historic former US Embassy Building at 30 Grosvenor Square, is transforming a £1bn mixed-use property, with construction ongoing since 2021.

Along with Carbone, the property will welcome the flagship restaurant of Richard Caring's Le Caprice, set to open in mid-2025.

Caring, the founder of Caprice Holdings, oversees a portfolio that includes the Sexy Fish chain and the exclusive Mayfair club Annabel’s.

He has recently made headlines with plans to auction his stake in the Ivy restaurant chain, with bids starting at £1bn ($1.26bn).

Le Caprice, located in the St James's neighbourhood of London, used to be the most well-known eatery in the area and was famously visited by Princess Diana and Mick Jagger in the 1990s. Caring took over in 2005 and it closed in 2020.

Another well-known London restaurateur, Jeremy King, who helped establish Le Caprice as a hotspot, has taken over the old Le Caprice location and plans to open Arlington in spring 2024.
