Chef Fabio Trabocchi opens new restaurant in Florida, US

The new restaurant features an open exhibition pasta room, a mozzarella bar kitchen, a charcuterie station, a pantry and a bar.

Chef Fabio Trabocchi of the Fabio Trabocchi Restaurants collection has opened a new restaurant concept, Fiolina Pasta House, in Boca Raton, Florida, US.

Located at Restaurant Row in midtown Boca Raton, the new 7,000ft² restaurant accommodates 182 guests and features an open exhibition pasta room, a mozzarella bar kitchen, a charcuterie station, a pantry and a bar.

It also has a show kitchen with counter seating and a cold station for salads and desserts celebrating Fiolina’s culinary artistry.

The new restaurant offers its guests a wide range of individual and family-style dishes, which are made with locally sourced ingredients from farms, fisheries, meat purveyors and Italian goods suppliers.

Fiolina has an indoor/outdoor bar serving an array of classic cocktails and wines.

It also has handcrafted Italian speciality cocktails including Amalfi Lemon Spritz, Aperol Spritz and Basil Cucumber Cooler Al Fresco, along with seasonal options that change throughout the year.

The indoor/outdoor bar also features a 1,500ft² patio decorated with red patterning and operable window walls.

Chef Fabio said: “Fiolina is not just an ode to Italian culinary heritage, but also a restaurant dedicated to South Florida and the wonderful community of Boca Raton, a city that Chef Fabio now calls home. It has been created as an instant classic: for people, celebration, gatherings, networking, and socialising with an Italian flair.”

Could the consumer industry be bolstered by the increased use of AI?

Western Europe foodservice market dynamics

The total revenue of the Western European foodservice profit sector totaled $685.3 billion in 2022, having declined at a negative CAGR of 2.4% during 2017–22. In 2022, FSR was the largest foodservice channel, with a value share of 25.9%, followed by QSR. However, the region’s foodservice sector is poised to bounce back as it is forecasted to register a CAGR of 8.1% by 2027.
