Cibotica unveils new ingredient-dispensing tech for restaurants

The new technology is expected to help restaurants save 30% on labour costs.

Canadian dispensing and portioning technology developer Cibotica has unveiled new ingredient-dispensing technology to address challenges in the restaurant industry.

The technology has been developed over two years of research.

The patent-pending and AI-driven core technology can be adapted to varying ingredients, making it a capable solution to accurately dispense and portion meals.

The technology is compact, modular and under-the-counter, and is designed for assembling salads and bowls.

It will save restaurants 30% on labour costs.

The solution can deliver up to 300 bowls per hour. Its accurate portioning can significantly reduce food wastage.

The solution uses a conveyor belt on which the food bowls are placed automatically. As the conveyor moves, precise portions of pre-determined ingredients are dispensed into the bowls.

As a plug-and-play system, this represents a turn-key solution that can be seamlessly integrated into existing kitchen layouts without major disruptions or changes in how restaurants prepare their ingredients.

Cibotica co-founder Ashkan Mirnabavi stated: “Our journey began as restaurant industry veterans faced modern-day operational issues firsthand. We've been particularly focused on improving portioning and efficiency, tasks that have always been difficult to manage well.”

As we expand our influence in the quick-service restaurant sector, we are simultaneously advancing our core technology for broader applications across various industries.

Western Europe foodservice market dynamics

The total revenue of the Western European foodservice profit sector totaled $685.3 billion in 2022, having declined at a negative CAGR of 2.4% during 2017–22. In 2022, FSR was the largest foodservice channel, with a value share of 25.9%, followed by QSR. However, the region’s foodservice sector is poised to bounce back as it is forecasted to register a CAGR of 8.1% by 2027.
