KAYAVA to open artisanal ramen restaurant in Seattle, US

The menu includes soup, handmade noodles, chashu pork and bamboo shoots.

Artisanal ramen restaurant KAYAVA is set to open its new venue in Seattle, Washington, on 3 October 2024.

The restaurant, located at the former Eve outlet in Fremont, will be under the supervision of Masuo Onishi, owner and chef of the Tsurumen Davis in Japan and Boston, Massachusetts.

KAYAVA’s offerings include soup, handmade noodles, chashu pork and bamboo shoots, prepared using traditional techniques.

Its soup is made using fresh ingredients and simmered for an extended period daily to enhance its flavour.

The exterior design of KAYAVA reflects traditional Japanese aesthetics.

The interior accommodates diners with 13 seats at its counter and 28 table seats.

The company stated: “The brand name comes from a place in Tokyo, Japan called "Kayabacho," which was created by urban planning at the end of the Edo period, around 400 years ago.

“We were inspired by how Kayabacho was transformed into a town where people came and went as a realisation of Edo's "I want to do this" urban plan, and interpreted "KAYAVA" as an active word that means "I want to do" rather than "what will happen.”

In September 2024, Japanese restaurant chain Ramen Arashi announced that it would open a new restaurant in Kensington, Calgary.

The new location will be the brand’s fifth venue.

The brand, which is known for its Japanese ramen, already operates restaurants in Banff, Canmore, Victoria and Kelowna.
