Fast casual food concept Koibito Poke has further expanded its presence in the US by opening a new store in Charlotte, North Carolina.

Located at 4701 Park Road, Suite B, Koibito Poké will host an official opening celebration on 23 September 2023, with specials and giveaways.

Koibito Poke co-founder and CEO Todd Stottlemyre said: “Our Charlotte location is exciting and important for the growth of Koibito Poké.

“It will serve as the training location for our future East Coast stores. The Charlotte team brings an unparalleled level of experience to the brand and we are thrilled to be introducing our award-winning concept to new markets across the country.”

The opening of the Charlotte store is part of Koibito Poké nationwide growth plan. It plans to open four new stores by early 2024.

Over the next six months, the fast casual concept plans to open two more locations in metropolitan Phoenix.

In early 2024, the restaurant chain intends to open another location in the St Louis region.

Earlier this year, Koibito Poké opened a new restaurant outlet in Missouri at Ball Park Village. It also opened its third Nevada location in Henderson last month.

In January 2022, Koibito Poke reached a franchise sales pact with True Capital Partners for at least 300 locations across eight states in the US.

The pact will be executed over the next five years, with the first 120 stores expected to be opened in the next 24 to 30 months. True Capital Partners is said to have partnered with Koibito Poke due to its large customer audience.

Customer engagement drives metaverse investment in the foodservice sector

COVID-19 and supply chain disruptions following the Ukraine war have accelerated automation and digitalization in the foodservice sector. Home delivery services and consumer engagement through digital channels have become essential for businesses trying to stay afloat. Foodservice companies must also cope with ESG issues, the fast-changing world of work, and the global economy heading for recession and possible stagflation. The metaverse, enabled by both AR and VR, is an important tool that can help address many of the foodservice industry's key challenges.
