Fast casual restaurant chain Zaxby’s is set to open its first location in Columbia, Kentucky, on 16 October 2023.

Located at 301 Dohoney Trace, the new restaurant venue will be owned and operated by AJ Hospitality.

AJ Hospitality owner Scott Hail said: “We are so happy to bring the first Zaxby's to the fast-growing community of Columbia. It is our desire to establish a lasting relationship with Adair County residents.

“We are excited to bring such indescribably good chicken to this area and look forward to meeting and growing together as a community. We are planning to hire 50 new team members for our upcoming grand opening.”

The Zaxby’s Columbia location will have double drive-through lanes, as well as dine-in services. It will also be equipped with digital menu boards for expedited orders and pickup.

The farmhouse-style restaurant, which covers an area of 2,900ft², will have the capacity to accommodate up to 56 seated guests.

The restaurant company said that the new venue will also have an expansive back-of-house kitchen with advanced appliances to ensure hot and fresh service every time.

For even faster service, customers may also order ahead through Zaxby’s website and app.

The restaurant will also offer delivery services through its Zaxby’s app and other local third-party delivery services such as DoorDash, UberEats and Grubhub.

In August this year, Zaxby’s opened its second new location in Pooler, Georgia.

Located at 102 Zoya Lane, the new restaurant is owned and operated by SSR Savannah. Covering an area of 3,400ft², the farmhouse-style restaurant features a dine-in space that can accommodate up to 56 guests.

Quick commerce steadily becoming the norm for most food and grocery delivery companies

The emergence of ecommerce has made it imperative that companies understand consumer behavior, deliver personalized service, and offer competitive pricing models. Per GlobalData estimates, food and drink, clothing and footwear, and accommodation were the top three sectors by global ecommerce transactions in 2022. The rise of quick commerce, particularly within food and drink, allows consumers to have items delivered to their doorstep within the hour, which has driven a surge in online sales for food and drink.
